When I think about summer, it’s long hot days, beautiful beaches and strawberries and cream. Wimbledon is in July, too, and this dish is synonymous with the tennis event.
While this is a lovely treat, I found an alternative to cream which has less calories and tastes delicious. I discovered quark, which is a soft cheese, while looking for healthy recipes on various slimming websites.
I’m not so keen on the taste on it’s own, but mixed in with Cadbury’s chocolate options, it’s sensational!
The recipe is so simple and easy to make. I usually mix all the ingredients into the quark tub so I don’t dirty up and extra dish, and it’s handy for storing in the fridge.
In this recipe I used white chocolate options, and there are many more flavours that you can try. I’ve found that one sachet is fine for the white chocolate, but with some of the others, two sachets give you more depth of flavour.
There are also different brands of quark, so check out the calories and sugar content to find the one that suits you the best. I chose Arla’s quark for this dish.
You can also have fun with the basic recipe. Why not crumble up some meringue, layer the strawberries and quark to create an Eton mess?
Or perhaps you’d like some dark chocolate to contrast the taste of the white chocolate, so add some sprinkles to the top of your dish. It’ll look great too!
As well as adding options to the quark, some recipes I’ve found also mention adding vanilla extract and/or sweetener too. I added vanilla extract to mine, but not the sweetener as I think the white chocolate is sweet enough – it’s all down to taste.
Quark 250g tub (163 calories) – use as two large portions or four smaller ones.
Options white chocolate sachet (44 calories) – three heaped teaspoons if you have the jar.
Strawberries (33 calories/100g)
1 teaspoon vanilla extract
1 teaspoon sweetener
Crumbled up meringue
Dark chocolate sprinkles
1. Mix the options into the quark.
2. Chop up the strawberries and place them in the bottom of your dish
3. Spoon the quark on top of them.
4. Finish with a whole strawberry.
